INGREDIENTS:

code 1664C STRAWBERRY VARIEGATE
code 1617 STRAWBERRY GELOGLASS
Fresh strawberries
Glucose syrup
Fresh 35% cream

SERVING TEMPERATURE: -7°/+5°C

STORAGE TEMPERATURE: -18°C

 

PROCEDURE:

Mix 1000 g (35 oz) of fresh cream and 200 g (7 oz) of Aromitalia Pronto Soffice Dry in your ice cream maker, chill for 4-5 minutes and, finally, mix the batter at medium speed.

Add 300 g (10.5 oz) of Strawberry Variegate to the resulting mix.

Cut the strawberries into thin slices and lay them out in a circle at the bottom of the glass.

Fill the central part with the resulting mix using a pastry bag and close with a thin layer of Strawberry Variegate. Glaze the surface with Aromitalia Geloglass Fragola and decorate as desired with fresh strawberry roses and strings of Glucose syrup.
